We dry our pasta slowly at room temperature in order to preserve the nutritional qualities of the raw ingredients. Did you know buckwheat is no relation to wheat but actually a fruit seed and member of the rhubarb family. Nutritious and naturally gluten free, buckwheat is a good source of fibre, rich in B vitamins as well as magnesium, iron and zinc.
